Simple and Delicious Mediterranean Chickpea Salad

Half a red onion

4 mini cucumbers

1 cup Kalamata olives

1 cup cherry tomatoes

1 15.5 can chickpeas (drained and rinsed)

1 block of feta cheese (or as much as you like)

1/4 cup chopped parsley

Dressing:

1/3 cup extra virgin olive oil

1 tablespoon rice vinegar

Juice of 1 lemon

1/2 teaspoon oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

步驟

To start, prep the dressing by combining all the ingredients in a mason jar. Just shake it up until everything is well mixed.

Next, chop all the veggies, olives, and feta cheese into roughly the same size pieces. Don’t forget to chop the parsley finely.

Drain and rinse a can of chickpeas.

Finally, in a large bowl, combine all your chopped ingredients and pour the dressing on top. Mix everything well and enjoy!
