Rich Chocolate Cake

1 c butter

9oz 62% semi-sweet chocolate

Melt butter first and add chocolate over warm heat.

6 eggs, separated

3/4 c white sugar

3/8 c brown sugar

Beat sugars into yolks, add warm chocolate mix.

Then add:

3/8 c cake flour

3 T ground almonds

Slightly warm egg yolks over double boiler. Beat with 1/2 t cream of tartar. Beat until

creamy and rounded. Fold together with chocolate, being careful not to deflate whites.

Prepare 8 or 9 inch springform pan, butter and line pan. Bake in oven at 325 for about

25 mins, until set on sides, soft and creamy circle, should wiggle.
