How to Make Balsamic Pearls

1 cup balsamic vinegar
1 teaspoon agar powder
HOW TO:

Chill a bottle of vegetable oil by sticking it in the freezer, you will need it later.
In a pot, mix together the balsamic vinegar and the agar powder.
Bring the mixture to a simmer to activate the agar powder. Let simmer for 1-2 minutes.
Remove from heat. Let the mixture cool for just 2-4 minutes, then use a funnel to transfer it to a squeeze bottle.
Remove the vegetable oil from the freezer. Fill a glass with the cold vegetable oil.
Using the squeeze bottle, squeeze little droplets of the balsamic mixture into the olive oil.
Strain over a bowl to save the oil, then rinse the pearls under running water.
Serve with caprese, burrata, or whatever your heart desires.
