Single Serving peanut butter Chocolate Chip Cookie

1 peanut butter oatmeal Chip Cookie:

2 tablespoons melted butter

2 tablespoon packed dark brown sugar

1 heaping tablespoon of peanut butter

1 large egg yolk only

1/8 teaspoon vanilla bean paste or extract

1/4 cup AP flour

1 1/2 tablespoons oats

1/8 teaspoon baking soda

1/8 teaspoon fine table salt

2 tablespoons semi sweet chocolate chips

Preheat the oven to 375F convection or 400F regular bake setting.

In a small bowl stir together all the ingredients except for the chocolate chips and oats just until combined into a dough. Fold in the chocolate chips and oats and then form the dough into a ball.

Chill the dough for 10 mins in the freezer just to set it.

Bake 11-12 minutes or until golden on the edges but still gooey inside. if it puffs too much you can lightly press it down right when it comes out with a spatula. Cool a few minutes then enjoy!!
