Avery's Spicy Fusilli

Ingredients:

Steps:

Sunday

1/2 shallot or 1/2 small sweet onion, minced

2 cloves garlic, minced

1/2 cup parmesan cheese

1/4 cup fresh basil

1 teaspoon red pepper flakes

2 tablespoons of unsalted butter

2 tablespoons of vodka

1 cup heavy cream

1 small can tomato paste (5-6oz)

3. Add tomato paste and mix until well combined

4. Add vodka, wait until it evaporates

5. Add heavy cream ard red.

Repeatie, mix mon with salt and peppe:

6. Add pasta to the sauce, add butter and 1/2 cup of pasta water

7. Add parmesan and fresh chopped basil on top

*Use this sauce to make a baked tortellini or ravioli-its delicious, see Baked stuffed Pasta (recipe found on page 142)

2. Cook pasta as per instructions, drain reserving 1 cup of pasta water, set aside

2. Fry garlic and shallot in a large frying pan with 2 tbsp olive oil until softened
