Sizzling Garlic Chilli Noodles

2 spring onions, chopped
4 cloves garlic, finely chopped
2 - 3 red chillies, chopped
1/2 tsp Korean chilli flakes (Gochugaru)
3 tbsp rice bran oil
2 tbsp vegetarian oyster sauce
1 ½ tbsp light soy sauce
1 tbsp rice vinegar
1 tsp sugar
½ tbsp sesame oil
Coriander, to garnish
步驟
To make the hot oil base, place garlic, spring onion, chilli and chilli flakes into a heatproof bowl. Heat the oil until hot, then carefully pour it over — it should sizzle and release all those aromatics.
Add vegetarian oyster sauce, light soy sauce, rice vinegar, sugar and sesame oil. Mix well, taste and adjust seasoning as needed. Toss through freshly cooked noodles and finish with coriander.
