Indecision Chicken (a.k.a. Shay's Cambodian Peppercorn Chick

1 1/2 lbs boneless skinless chicken thighs (and/or breasts)

1 clove garlic

2 tbsp fresh italian parsley, minced

1 tbsp fresh sage, minced

1 lemon, juice and zest, plus wedges for garnish

1 tbsp dijon mustard

2 tbsp brown mustard

1 tbsp honey

1/4 cup extra virgin olive oil

1/2 tsp kosher salt

1/4 tsp freshly ground black pepper

Combine all ingredients except chicke in a large bowl. Whisk to combine. Add the chicken and coat thoroughly with the marinade. Marinade for 30 min - 1 hr at room temperature, or covered in the refrigerator over night. If refrigerating, bring to room temperature before proceeding.

Preheat the grill for high heat (or a grill pan). Make sure the grates are very clean and well oiled so that the chicken doesn't stick.

grill the chicken, turning occasionally, untill chicken reaches an internal temperature of 165° F. About 5 min per side. Transfer to a platter and serve immediately.

Alternatively, roast the chicken in a 425° F oven, turning half way through, about 25 min total.
