Sweet Chili Salmon Strips with Creamy Lime Dressing

For the salmon:

500 g salmon fillet (cut into strips)

Salt and pepper

¼ cup sweet chili sauce

Juice and zest of 1 lime

1 tbsp oil (for frying)

For the creamy lime dressing:

¼ cup Greek yogurt or sour cream

1 tbsp mayonnaise

Juice of 1 lime

1 tsp honey (optional)

Salt and pepper to taste

Prep the salmon:

Cut salmon into strips and season lightly with salt and pepper.

Make the glaze:

In a small bowl, mix sweet chili sauce, lime juice, and lime zest.

Cook the salmon:

Heat oil in a frying pan over medium-high heat.

Add salmon strips and cook 2–3 minutes per side, until golden and cooked through.

During the last minute, brush or spoon the sweet chili mixture over the salmon.

Make the dressing:

In a bowl, stir together yogurt, mayonnaise, lime juice, honey, salt, and pepper until smooth.

Serve:

Drizzle the creamy lime dressing over the salmon strips or serve it on the side.

Garnish with lime wedges or fresh herbs if you like.
