Hummus & Pita Bites

Hummus:
1 can chick peas
¼ cup tahini
2 cloves garlic
1 lemon, squeezed
1 tbsp olive oil
1 tbsp salt
Couple ice cubes
Meat:
½ pound chopped beef or lamb
2 tbsp butter/ghee
Salt and all spice to taste
Drizzle of pomegranate molasses
Topping:
Pine nuts roasted in olive oil and Ghee

In a blender, add the chick peas and blend well. Then add the ice cubes, blend some more. Following that, add the remainder of the ingredients and blend to a creamy smooth texture. Taste, then add additional lemon and tahini as desired. If the consistency is too thick, you can break the thickness further with ice cubes.
On medium heat, cook the meat in some butter, add salt and all spicce as the meat is cooking, then drizzle the pomegranate molasses when ready to remove from heat.
Plate the hummus and allow to cool in the refrigerator before serving. Top with the meat and pine nuts.
Pita Dough:
1 ½ cups all-purpose flour
½ cup warm milk
2 tbsp olive oil
½ tbsp instant yeast
½ tbsp granulated sugar
½ tsp salt
Knead the dough for 5-10 minutes, then allow to proof for 1 hour.
Roll the dough out on a lightly floured surface.
Use your desired size cookie cutter to cut out your pitas bites (I used a 2-inch cutter).
Allow to rest for 30 minutes.
Bake the dough in an oven preheated to 450F on a pizza stone for 3-4 minutes
Tip: steam your bread by placing a tray of boiling water on the bottom rank of the oven during the baking process for a better rise and crisper outside.
