Saucy Maple-miso Brussel Sprouts

2 pounds Brussels sprouts, trimmed and halved

3 tablespoons olive oil

Kosher salt and freshly ground pepper

½ cup maple syrup

3 tablespoons apple cider vinegar

4 teaspoons white miso paste

Flaky salt and lemon wedges, to serve

Preheat the oven to 425° F with a rack in the center position. On a rimmed baking sheet, combine the Brussels sprouts and olive oil. Season with salt and pepper. Stir to coat, then flip all Brussels sprouts cut side-down. Roast until Brussels sprouts are easily pierced with a knife and browned in spots, about 20 minutes.

Meanwhile, in a small saucepan, bring the maple syrup to a boil over medium. Continue cooking until the syrup has reduced slightly and is starting to turn a darker shade of brown, about 3 minutes more. Add the miso paste and vinegar to the saucepan and whisk to combine. Continue cooking for 3 minutes, until miso has dissolved and syrup has thickened slightly. Season to taste with salt and pepper. Pour the glaze over the roasted Brussels sprouts and stir to coat. Transfer to a serving bowl, then squeeze lemon juice over the top and hit with a little more flaky salt. Fin!🤌🏼
