10 Min Pickled Cucumbers

They take all of 10 minutes to make and go with everything — from salmon bowls to spicy noodles to girl dinner nights on the couch.
Here’s how:
2 Persian cucumbers, thinly sliced
1 tbsp rice vinegar
1 tbsp soy sauce or coconut aminos
1 tsp sesame oil
1 tsp sweetener (optional but worth it)
1 clove garlic, grated
½ tsp chili flakes or chili oil (optional)
Sesame seeds + green onion to finish
Toss it all together, chill if you can wait, and thank me later.
