Pan-seared Salmon with Mango Avocado Salsa and Cilantro Lime

For the Salmon

4 salmon fillets (skin-on optional)

1 tablespoon olive oil

Salt and black pepper, to taste

1 teaspoon paprika

1 teaspoon garlic powder

Mango Avocado Salsa

1 ripe mango, diced

1 ripe avocado, sliced or diced

2 tablespoons fresh cilantro, chopped

Juice of 1 lime

Pinch of salt

Cilantro Lime Sauce

1 tablespoon butter

3 cloves garlic, minced

1 cup coconut milk (or heavy cream if preferred)

Juice of 1 lime + lime zest

2 tablespoons fresh cilantro, chopped

Salt and pepper to taste

Prepare the Salmon

Pat salmon dry and season both sides with salt, pepper, paprika, and garlic powder.

Heat olive oil in a large skillet over medium-high heat.

Place the salmon fillets skin-side up and sear for about 4 to 5 minutes until golden.

Flip and cook another 3 to 4 minutes, until salmon is just cooked through.

Remove salmon from skillet and set aside.

Make the Sauce

In the same skillet, reduce heat to medium.

Add butter and minced garlic; sauté for 30 seconds until fragrant.

Pour in coconut milk (or cream) and stir to deglaze the pan.

Add lime juice, zest, and chopped cilantro.

Season with salt and pepper. Simmer for 2 to 3 minutes until slightly thickened.

Mango Avocado Salsa

Combine mango, avocado, cilantro, lime juice, and a pinch of salt in a bowl.

Toss gently to avoid smashing the avocado.

Assemble and Serve

Return salmon to the skillet, spoon sauce over the top, and warm briefly.

Plate salmon portions and top with mango avocado salsa.

Serve with lime slices and extra cilantro if desired.
