Easy Mediterranean Salmon

1 lb salmon fillet

6 garlic cloves, thinly sliced

2 tbsp chopped capers

Zest of 1 large lemon

Juice of 1/2 lemon

2 tbsp olive oil

Salt & black pepper

1 tbsp sweet paprika

1 tsp Calabrian chili flakes (or red chili flakes)

Topping After Baking:

Handful of fresh parsley, chopped

1/3 cup toasted walnuts, chopped

Drizzle of olive oil

Squeeze of lemon juice

Pinch of salt

Extra chili flakes (optional)

Preheat oven to 400°F (200°C). Place salmon on a lined baking sheet.

In a bowl, mix garlic, capers, lemon zest, lemon juice, olive oil, salt, pepper, paprika, and chili flakes. Spread evenly over salmon.

Bake for 17–18 minutes, or until salmon is cooked through (time may vary with thickness).

In a separate bowl, combine parsley, walnuts, olive oil, lemon juice, salt, and chili flakes.

Remove salmon from oven, top with the parsley-walnut mix, and serve immediately.

Tips:

Pairs perfectly with roasted veggies, quinoa, or a fresh salad.

For a low-carb option, try cauliflower rice.
