Onion - 1 large

Garlic - 4 cloves

Green bell pepper - 1

Chili pepper - 1

Tomato paste - 2 tbsp

Crushed tomatoes - 1 can, 15 oz (400 g)

Kidney beans - 1 can, 15 oz (400 g), drained

Pinto beans or black beans - 1 can, 15 oz (400 g), drained

Corn - 1/2 cup (80 g)

Vegetable broth - 1 1/2 cups (360 ml)

Spices:

Cumin - 1 1/2 tsp

Smoked paprika - 1 tsp

Chili powder - 1 tsp

Oregano - 1/2 tsp

Cocoa powder - 1/2 tsp

Maple syrup or sugar - 1/2 tsp

Salt - to taste

Black pepper - to taste

Heat oil in a pot over medium heat.

Add onion and cook for 5 minutes until soft.

Add bell pepper, garlic, and chili pepper. Cook for another 3 minutes.

Stir in tomato paste and cook for 1 minute.

Add spices and cook until fragrant.

Pour in crushed tomatoes, broth, and beans.

Simmer for 25-30 minutes.

Add corn, salt, and black pepper.

Cook for 5 more minutes until thick.

Serve with:

Vegan yogurt or sour cream

Guacamole or avocado

Cilantro

Corn chips

A squeeze of lime
