Baked Octopus

5.    Remove the octopus

1 ½ kg octopus

2 onions

1 fennel bulb

5 garlic cloves

5 medium very ripe tomatoes

2 bay leaves

Salt, pepper, oregano

200 ml red wine

100 g olive oil

步驟

Place all the vegetables in a baking dish and lay the octopus on top.

Season with salt, pepper, oregano, and bay leaves. Add the wine and olive oil, then mix everything well.

Rearrange the vegetables underneath and the octopus on top. Cover tightly with damp parchment paper and aluminum foil to trap the steam.

Bake in a preheated oven at 180°C (350°F) for 45 minutes. Then uncover and continue baking for another 15–20 minutes until the octopus is tender, caramelized, and the liquids have reduced.

Press the vegetables to release their juices. Strain the liquid into a saucepan and simmer for about 10 minutes to reduce into a rich sauce.

Serve the octopus with the sauce, a drizzle of olive oil, a squeeze of lemon juice, and a sprinkle of oregano.
