Avocado, Caper, and Arugula Tramezzini

8 slices high-quality sandwich bread (pane in cassetta), made from unbleached flour
1 medium avocado, ripe but firm
1 tablespoon capers
Lemon juice
Salt and freshly ground black pepper
16 small tender arugula leaves
Extra-virgin olive oil

Trim crusts from bread.
Cut the avocado in half lengthwise. Remove the pit. Cut each half again. Peel each section and cut into lengthwise slices. Fan out the avocado slices on 4 slices of bread, using ¼ of the avocado on each slice. Scatter the capers over the avocado, pressing them down lightly so they adhere. Sprinkle with lemon juice (about 1 teaspoon per tramezzino). Season with salt and pepper. Arrange the arugula leaves over the top. Season lightly with salt. Drizzle with a few drops of olive oil. Cover with the remaining 4 slices of bread. Press down gently. Serve soon after assembling, since avocado discolors on contact with air.
Makes 4 tramezzini.
