Winter Blues Cabbage Crunch Salad

This is the salad you eat when you’re dreaming of spring… but still deep in winter mode ❄️➡️🌱
It’s got all the crunch from shredded cabbage and pistachios,
but surprises you with juicy pears and pops of pomegranate that feel fresh, bright, and very not winter.

Add in:
tender spinach leaves
piles of freshly grated Parmesan
and a tangy, creamy lemon sour cream dressing
And suddenly… winter doesn’t feel so heavy.
It’s crunchy.
It’s creamy.
It’s addictive.
And honestly? This salad might be the only thing getting me through the winter blues.
Make a big bowl. Trust me. And because it’s cabbage with lots of lemon - it last up to 3 days in the fridge still with that perfect crunch!
RECIPE:
For the salad:
1 small cabbage, shredded
Handful of spinach leaves, chopped
1/2 red onion, diced
2 pears, diced
1 cup pomegranate seeds
Handful of chopped pistachios
1.5 cups grated Parmesan cheese
For the Dressing:
1 whole lemon zested and juiced
1/2 cup sour cream or mayo
2 tsp. Red wine vinegar
2 tbsp. Maple syrup
3 tbsp avocado oil
1 tsp. Onion salt
Pinch salt and pepper
