Spinach Frittata Panini

1 small bunch tender green spinach

Salt

1 tablespoon extra-virgin olive oil

1 garlic clove, peeled and finely minced

3 eggs, preferably cage- free

2 tablespoons grated

Pecorino Romano cheese

1 tablespoon unsalted butter

1 tablespoon extra-virgin olive oil

2 large baguette-shaped rolls

Unsalted butter, softened at room temperature, to spread on rolls

Trim the stalks from the spinach. Wash the spinach leaves by placing in a large bowl or sink full of cold water. Change the water about 3 limes, or until the bottom of the bowl or sink is completely free of grit. Lift the spinach out of the water and place in a sauté pan with just the water that clings to the leaves. Sprinkle with salt. Cover and cook ovet high heat. After a minute or two, remove the cover and stir. Lower the heat te medium and continue to cook until the spinach is just barely wilted. Drain well in a colander. Use the back of a wooden spoon to gently press out excess moisture. Coarsely chop the spinach. Place 1 tablespoon olive oil and the garlic in a small, ovenproof sauté pan measuring about 6 inches in diameter. Cook over low heat for a minute or two, then add the spinach. Toss spinach, adding salt to taste. Stir over medium heat until any remaining moisture in the spinach evaporates, about 1 to 2 minutes. Let cool. Break the eggs into a bowl and beat with a fork. Add grated cheese and cooled spinach and mix well. Wipe the sauté pan clean with a paper towel. Add 1 tablespoon butter and I tablespoon olive oil to the pan. Turn the heat to high and stir. When the foam begins to subside, add the egg mixture all at once. Use a wooden spoon to pull egg mixture away from sides of pan toward the center, until large curds form. When the bottom of the frittata begins to firm up, place the pan under a hot broiler and cook until the frittata is just firm all the way through. Unmold onto a plate and let cool. Split the rolls in half lengthwise. Very lightly butter both sides of the rolls. Cut the frittata in half and place on the bottom halves of the rolls. Cover with the tops of the rolls.
