Orange Ginger Edamame Salad

Recipe:

3-4 Persian cucumbers, cut into half moons

2 handfuls mini bell peppers, sliced

1 can garbanzo beans

1 frozen bag of edamame, steamed

1 bag coleslaw (or chopped green and purple cabbage and carrots)

2 carrots, thinly sliced

1 bunch green onions

Sauce:

1 large thumb sized piece of ginger, minced or grated

⅓ cup and 2 tbsp low sodium soy sauce

3 tbsp rice vinegar

Juice of one orange (if it’s not very juicy, add another ½ until desired taste!)

1 tbsp toasted sesame oil

1 tbsp sriracha (add less if you aren’t a fan of spice!)

Juice of 1 lime

1 tbsp sesame seeds
