Creamy Coconut Lime Chicken with Chili and Fresh Herbs

Ingredients:

1.5 lbs boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

1 tablespoon olive oil

3 cloves garlic, minced

1-inch piece of fresh ginger, grated

1/2 teaspoon chili flakes (adjust to heat preference)

Zest of 1 lime

Juice of 1 lime

1 can (14 oz) full-fat coconut milk

1 tablespoon soy sauce

1 teaspoon brown sugar or honey

Salt and pepper to taste

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Cooked jasmine rice, for serving

Directions:

Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear until golden brown and cooked through, about 6–8 minutes. Remove and set aside.

In the same skillet, add garlic, ginger, and chili flakes. Sauté until fragrant, about 1 minute.

Stir in lime zest, coconut milk, soy sauce, and brown sugar. Bring to a gentle simmer.

Return the chicken to the skillet and let it simmer in the sauce for 5–7 minutes, allowing the flavors to meld.

Stir in lime juice and season with salt and pepper to taste.

Serve hot over jasmine rice, garnished with fresh cilantro and lime wedges.
