One Pot Broccoli Shell Pasta

Chuck the pasta into a large saucepan and pour over 1 litre of just boiled water. Use a snug pan that means the pasta is covered in the water so it cooks evenly. Bring to the boil over a high heat. Cover, reduce the heat to medium-low, you want it gently bubbling away and cook for 10 minutes. If u are using the large pasta shells, it might take longer 14-16 minutes, depending on the size of your pan.

Add the broccoli, frozen peas and spinach. Cover and cook for 6-8 minutes or until the pasta is cooked and all but a trickle of the liquid has been absorbed.

Add the basil, cream cheese, pesto, lemon zest and juice and a huge pinch of salt and pepper. Mix well until wonderfully creamy.

Divide between four bowls and serve immediately with extra cheese, and chilli flakes and pine nuts if you fancy them
