Dubai Chocolate Dates

1 ½ cups shelled pistachio
½ cup powdered sugar
½ tsp salt
⅓ cup avocado oil
1 cup rice crispy cereal
15 pitted medjool dates
1 cup dark chocolate chips
Flaky Sea salt

Add pistachio, sugar and salt to a food processor and blend on high. Stream in the avocado oil and continue to blend until smooth and creamy.
Add rice crispy cereal and pistachio cream to bowl and mix well.
Open the dates and place them skin side down onto a parchment lined tray. Place a piece of wax paper or plastic wrap on top of the dates and use the bottom of a glass to flatten the dates.
Spoon about 1½ tbsp of the rice crispy mixture onto each date and press flat.
Add chocolate chips to a microwave safe bowl. Microwave for 30 second intervals, stirring in between, until the chocolate is fully melted.
Spoon about a tbsp of melted chocolate over each date.
Top each date with a pinch of flaky sea salt.
Refrigerate for an hour and enjoy!
store leftovers in the refrigerator for up to 7 days.
