here’s everything you’ll need:
2 tablespoons oil
1 1/2 pounds boneless, skinless chicken thighs or breasts
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1 teaspoon smoked paprika
1 shallot
3 garlic cloves
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 cups butternut squash, peeled and cubed
2 cups low-sodium chicken or vegetable broth
3/4 cup canned coconut milk (half of a 13.5oz can)
Juice of 1/2 lemon
1 cup dry jasmine or basmati rice
2-4 sprigs of fresh rosemary, optional
plant based swaps: swap the chicken for two cans of drained and rinsed chickpeas and use vegetable broth. Reduce the broth to 1 cup broth to start, add more as needed.
