15 Minute Pesto Chicken

PESTO CHICKEN

1 ¼ lbs. boneless, skinless chicken breasts, sliced horizontally into thinner cutlets

Kosher salt and black pepper to taste

1 to 2 Tbsp. extra-virgin olive oil

1/4 cup prepared pesto (I use @delallofoods)

1/2 cup jarred sun-dried tomatoes (halves or julienne-cut)

3 to 4 Tbsp. freshly grated Parmigiano Reggiano

1/4 cup chopped fresh basil leaves

1 to 2 Tbsp. balsamic glaze

Suggested for serving: a fresh green side salad or sauteed broccoli and some crusty bread (or garlic bread!)

Pat chicken dry with a paper towel, and lightly season all over with kosher salt and black pepper. Place in a bowl and toss with olive oil and pesto.

Heat a large skillet over medium heat. Arrange chicken breasts in pan, avoiding any overlap. Cook, undisturbed, for 4 to 5 minutes, until nicely seared. Flip, and cook another 1 to 2 minutes before adding sun-dried tomatoes to pan. Scatter tomatoes over chicken and allow some of them to make contact with the pan, which will give them a nice sear. Generously grate Parmesan cheese over chicken and tomatoes, and let everything cook for 1 more minute to slightly melt cheese. Remove from heat and garnish with fresh basil and balsamic glaze.
