1 - 2 tbsp olive oil

1 tsp butter

4–5 ripe tomatoes

1 onion, diced

1 red bell pepper, sliced

Seasoning

1 tsp cumin

1 tsp paprika

1 tsp garlic powder

1 tsp oregano

1 tsp chili flakes

½ tsp black pepper

½ tsp salt

Shredded mozzarella cheese

3–4 eggs

Topping:

Fresh parsley

Feta crumbles

Heat olive oil and butter in a pan.

Add the diced tomatoes.

Place the diced onion in the center of the pan.

Add sliced red bell pepper around the edges.

Cover and cook for 10 minutes over medium heat.

Continue cooking for another 10–15 minutes until soft and juicy.

Remove the tomato skins (they should peel off easily).

Use a fork to mash the tomatoes directly in the pan.

Add all the seasonings and mix well.

(Optional) Add 1 tbsp of tomato paste for a richer flavor.

Stir in shredded mozzarella until melted.

Make small wells in the sauce and crack in the eggs.

Cover and cook for about 5 minutes, or until eggs are done to your liking.

Garnish with fresh parsley and crumbled feta.
