Chili Oil Noodles

- 1 pack potato noodles
- 2 strips bacon sliced
- 3 tbsp neutral oil
- 1/2 tbsp chili flakes
- 1/2 tbsp chili powder
- 2 cloves minced garlic
- 1 tbsp chopped scallions
- 1 tsp sugar
- 1/2 chicken powder
- 1 tbsp soy sauce
-1/2 tsp sesame seeds (optional)

1. Cook the potato noodles according to package directions. Drain and set aside.
2. In a heat proof bowl, combine chili flakes, chili powder, garlic, scallions, sugar, and chicken powder.
3. In a small pan, cook the sliced bacon with 3 tbspneutral oil until the bacon is crispy, and the oil is sizzling.
4. Carefully pour the hot bacon oil over the spice mix – aim for the chili powder, garlic, and scallions for that irresistible sizzle.
5. Add the cooked noodle noodles into the bowl with the chili oil mixture.
6. Pouring the soy sauce and toss until everything is evenly coated.
7. Garnish with sesame seeds (if using), serve immediately, and enjoy.
Tips
- for a milder spice use less chili powder
- for a boulder, tar kick, add a splash of extra soy sauce and a little Chinese vinegar.
- i use peanut oil for this recipe – it works beautifully, but you can substitute with avocado or vegetable oil.
- potato noodles give the best chewy texture, but you can also substitute with udon or knife, cut noodles.
