Bruschetta with Arugula Salad
Makes 4 bruschettas.

4 slices country bread, cut about ¾ inch thick
2 garlic cloves, peeled and cut in half
Extra-virgin olive oil for drizzling on bread
2-3 small bunches bright green arugula, stems trimmed
1 tablespoon extra-virgin
olive oil
1 tablespoon lemon juice
Sea salt

Grill or toast the bread on both sides until golden. Rub the bread on one side with the cut garlic and drizzle lightly with olive oil. Quickly toss the arugula with 1 tablespoon olive oil, the lemon juice, and salt to taste. Taste and add more oil and lemon juice if necessary. Mound
arugula on each slice of bread.
Makes 4 bruschettas.
