SMOKED MARTINI

2½ oz Empress 1908 Indigo Gin

½ oz Dry vermouth

2 dashes Orange bitters

Smoked Olives, to garnish*

METHOD: In a mixing glass, add all the ingredients except mezcal and stir over ice. Spray the inside of a chilled coupe with mezcal and strain the cocktail into the glass. Garnish with smoked olives and enjoy.

Use a smoke top to smoke the olives. Allow them to absorb the smoky flavour for one minute before serving.
