Pigs-in-blankets Traybake

2 small leeks, sliced
500g baby new potatoes, halved
2 carrots, cut into 2cm pieces
1 tbsp olive oil
8 reduced-fat pork sausages
8 rashers of streaky bacon
350ml beef stock
2 tosp cornflour
1 tsp dried thyme
20g light butter, melted

Preheat your oven to 200°C/180°C Fan.
Add the leeks, potatoes and carrots to a large baking dish, making sure they are spread out in an even layer, then drizzle over the olive oil. Season generously with salt and pepper and mix until the veg are well coated. l use my hands for this.
Wrap each of your sausages with a slice of bacon and arrange them on top of your vegetables.
In a jug, mix the beef stock, cornflour, thyme and melted butter, then gently pour it over your sausages and vegetables.
Bake for 55-60 minutes, until the potatoes are soft and the gravy has thickened. (If the sausages are getting a little too brown, simply cover the dish with foil for the remaining time.)
Gently stir to ensure everything is coated in the gravy, then serve.

Who said pigs in blankets are only for Christmas? Not me! This traybake
is a go-to for me, as you really do simply throw it together and let the oven do the work, leaving you with a full meal and the most luscious gravy. Serve with a side of peas and a splodge of ketchup - dinner sorted!
