Parmesan Lemon Chicken W/ Herbed Pea Purée & Spinach Orzo

• 12 oz pkg boneless, skinless chicken breasts

• 5 oz baby spinach

What you need

Preheat oven to 450°F with a rack in the upper third.

Heat 1 teaspoon oil in a medium saucepan over medium. Add orzo and cook, stirring, until toasted, 2-3 minutes.

Add broth concentrate, 1 cup water, and ½ teaspoon salt; bring to a boil over high heat. Cover; reduce to a simmer. Cook until orzo is tender and liquid is evaporated, 12-15 minutes. Cover to keep warm off heat.

Add peas to a medium microwave-safe bowl and microwave until bright green and tender, about 30 seconds.

Zest lemon, then halve and squeeze 1 tablespoon juice. Finely grate Parmesan, if necessary. Roughly chop cilantro leaves and stems. In a small bowl, stir together ½ teaspoon lemon zest and 2 tablespoons Parmesan.

Pat chicken dry; season all over with salt and pepper. Heat 1 tablespoon oil in a medium ovenproof skillet over medium-high. Add chicken and cook until well browned on one side. Flip chicken and top with Parmesan-lemon mixture.Transfer skillet to upper oven rack and roast chicken until browned and cooked through, 5-7 minutes.

Place peas, lemon juice, remaining Parmesan and lemon zest, and 2 tablespoons each of oil and water in a food processor or blender. Process until texture is similar to hummus. Add cilantro and 2 packed cups spinach; continue to process until smooth. Season to taste with salt and pepper.

To saucepan with orzo, stir in remaining spinach and a squeeze of lemon juice until wilted. Season to taste with salt and pepper. Serve Parmesan-lemon chicken alongside herbed pea purée and spinach orzo. Enjoy!
