Crispy Peri Chicken Burrito Bowls

These are absolutely banging 😍 crispy peri seasoned cornflake chicken, creamy peri drizzle, peri infused rice and all the good 🥗 perfect for an easy summer dinner

Ingredients (serves 2):
75g easy cook long grain white rice
2 x 100g chicken breasts
2 tsp peri seasoning
30g crushed cornflakes
1 small egg whisked
1 tbsp peri sauce
1 tsp mixed herbs
1 tsp smoked paprika
1 chicken stock cube crumbled
100ml water
1 flatbread
70g shredded lettuce
40g sweetcorn
60g cherry tomatoes quartered
½ small red onion diced
50g reduced fat coleslaw
Creamy Peri sauce:
2 tbsp lighter mayo
1 tsp peri sauce
1 tsp lemon juice
Pinch of salt

Cook the rice according to package instructions.
Season the chicken breasts with a tsp of peri seasoning all over and use the remaining tsp of peri seasoning to coat the cornflakes.
Dip each chicken breast into the egg, shaking off any excess before dipping into the cornflakes. Press into adhere.
Air fry the chicken for 16 minutes at 190 degrees celsius until cooked through. Alternatively bake at 200 degrees celsius for 20 minutes.
Whilst the chicken cooks, make the creamy peri sauce with the ingredients listed.
Once the rice is cooked, add in the peri sauce, mixed herbs, paprika, crumbled stock cube and water. Return to the hob for a couple of more minutes until the liquid has thickened.
Slice the flatbread into triangle shapes. Air fry for 1-2 minutes turning part way through. Alternatively bake for 3-4 minutes (keep your eye on them as different models of AF/oven will change)
Slice the cooked chicken into strips.
Serve the shredded lettuce along with the cooked rice.
Add the sweetcorn, tomatoes and red onion along with the sliced chicken and coleslaw.
Pop in the cooked flatbread triangles before drizzling over the sauce and serving.
