You loved this recipe so much last year I had to share it with you again. You can choose the garden vegetables based on where you are in the world, what is in season and what is available to you! Make this recipe your own 💚

For the first part of the cooking I dry fried the vegetables until they had a little colour. This helps to develop a little char but also stops you from using too much oil.

1 red pepper

1 courgette/zucchini

1 aubergine/eggplant

200g ripe cherry tomatoes

1 tsp oregano

20g basil

1/2 tbsp tomato paste

1 shallot

1 clove of garlic

Salt and pepper

Extra virgin olive oil

300g caserecce pasta
