Pear And Raspberry Bread

2½ cups self-raising flour

½ tsp baking powder

¾ cup caster sugar

½ cup desiccated coconut

2 eggs

1/2 tsp vanilla essence

120ml milk

125g butter, melted

1 large pear, diced into pieces

1 1/2 cups frozen raspberries

This tasty pear and raspberry bread is simple to make, with just three easy steps. Use frozen raspberries (they are available all year round), combined with the diced pear, for a perfect balance of fruit. Thickly cut slices will toast beautifully, or enjoy while still warm.

Preheat oven to 170°C. Line a deep loaf tin with baking paper. Sift flour and baking powder into a bowl. Add sugar and coconut.

In a separate bowl, combine eggs, milk, vanilla essence and melted butter. Whisk to combine. Make awell in centre of flour and pour in egg mixture. Fold gently. Add diced pears and frozen raspberries, and fold until just combined (do not over-mix).

Pour mixture evenly into prepared tin. Place in oven and bake for 65-75 minutes or until an inserted skewer comes out clean. Cool in tin for 15 minutes, then remove and cool on wire rack. Use a serrated knife to cook thick slices .
