French Onion Pork Bake

4 large lean pork loin steaks, trimmed of excess fat
1 tsp olive oil
2 red onions, finely sliced
40g instant gravy granules, mixed with 400ml boiling water
1 tbsp Worcestershire sauce
70g grated mozzarella
Salt and ground black pepper
Chopped parsley, to serve

Rub the pork steaks with the olive oil and season generously with salt and black pepper.
Heat a large sauté or frying pan over a medium to high heat. Add your pork steaks and cook for 4-5 minutes per side, until cooked through, allowing them to caramelise and get a golden crust. Remove and set aside.
To the same pan, add the onions, along with a small splash of water. Scrape all of the brown bits off the bottom of the pan and let the onions cook for 10-12 minutes, until soft and caramelised.
Add the gravy and Worcestershire sauce, stir well, then nestle the pork back in. Sprinkle over the mozzarella and add a lid. Leave for a few minutes to allow the cheese to melt, then serve with a sprinkling of chopped parsley.

This meal is hands down the most comforting dinner l've ever made. All the flavours of a classic French onion soup with none of the effort, and with tender pork chops too. Serve with veggies, some mash, or even crusty bread, to soak up the sauce. Dreamy.
