Lemon Pepper Chicken Caesar Burgers

1 lb ground chicken or turkey
1 tbsp extra-virgin olive oil
1 1/2 cups grated Parmesan cheese, divided
1 lemon
2 tsp Worcestershire sauce
2 garlic cloves, grated or minced
1 1/2 tsp freshly cracked black pepper, plus more for serving
1/2 tsp Kosher salt
4 burger buns
Cooking spray and/or melted butter
Caesar dressing
Romaine lettuce

Preheat oven to 400F.
In a large bowl, add chicken, olive oil, half of the parmesan, the zest of the lemon, garlic, Worcestershire, black pepper and salt; mix with your hands to thoroughly combine then form into four even patties (I like to lightly oil my hands before forming the patties to keep the meat from sticking.) Transfer to the refrigerator on a small baking sheet while you prepare the buns.
On a large parchment-lined baking sheet sprayed with cooking spray, add the burger buns and make 4 large rounds with the remaining Parmesan cheese. Coat the buns with melted butter or more cooking spray and transfer to the oven for about 7 to 8 minutes, until the buns are toasted and the cheese is darkened and sizzling (it will harden into a crisp as it cools.)
Cook the burgers over medium-high heat on a grill, griddle or skillet for about 6 minutes per side, and char the lemon you zested earlier alongside them. Spread caesar dressing on both sides of the buns then add your burger, romaine lettuce (I toss it with a little more dressing), a squeeze of the charred lemon juice, more black pepper, the parmesan wheel and finish with the top bun.
