Turkey Cottage Pie

2 lb Ground Turkey
4 Carrots
2 Sticks of Celery
4 Cloves Garlic
1 Large Onion
1 tbsp Olive Oil (for cooking)
A handful of frozen peas (if desired)
Salt & Pepper to taste
2 tbsp Tomato Paste, increase to taste (I ended up using ~4)
A few dashes Worcester Sauce
2 tbsp beef better than bullion
A really good glug of red wine
Oregano, sage, rosemary, thyme (whatever herbs you have/desire)
Garlic Powder
1 tsp Flour
4 Large Potatoes (I used approx 6 yellow potatoes and approx 2-3 cups of cauliflower, just the tops)
2 tbsp Butter
1/2 cup Milk or Heavy Cream
3 egg yolks
Grated Parmesan

Prepare the Meat Filling:
Heat a large skillet over medium heat. Add olive oil. Once hot, sauté the diced onions for 2-3 minutes until soft and fragrant. Add the ground turkey, breaking it up as it cooks. Stir in the diced celery and carrots, cooking until the vegetables are tender and the meat is browned. Add garlic towards there end of cooking.
Add Flavor:
Stir in the tomato paste, Worcestershire sauce, and better than bullion, ensuring everything is well coated. Add a few really good glugs of red wine and garlic powder to taste. Add herbs at this time and peas if adding. Let the mixture simmer for 5-10 minutes, allowing the flavors to meld together (I let mine simmer for much longer). For a thicker consistency, stir in a small amount of flour at this stage (optional). Remove the skillet from heat once the mixture is done.
Cook the Potatoes/Cauliflower:
Begin by bringing a large pot of salted water to a boil. Add the peeled and diced potatoes, and cook until fork-tender, about 10-15 minutes. I booked the cauliflower second since it cooks much more quickly.
Make the Mash:
Once the potatoes/cauli are done, drain them and return them to the pot. Mash thoroughly and mix in butter, milk or cream, along with your preferred seasonings (salt, pepper, garlic powder, etc.) until smooth and creamy. Remove from heat. Once cooled slightly, add 3 egg yolks and parm.
Assemble the Pie:
Preheat your oven to 400°F (200°C). In a deep 9x9-inch baking dish, spread the meat mixture evenly across the bottom. Layer the mashed potatoes over the meat, smoothing the top and raking the fork over the mash for texture. For an extra touch, grate Parmesan cheese over the mashed potatoes before baking (optional but highly recommended).
Bake and Serve:
Bake the Shepherd's Pie in the preheated oven for 30 minutes, or until the top is golden brown. Let it cool for 5-10 minutes before serving.
