Shrimp Scampi Pizza

3 tablespoons butter
2 tablespoons olive oil
4 cubes frozen garlic
1 mini bottle white wine (pinot grigio or prosecco)
Lemon zest (1/2 lemon)
1/4 cup heavy cream
1 pound medium shrimp, peeled and deveined
2 ready-made pizza crusts (Wegmans Roman-style)
2 cups shredded Pizza cheese blend, divided
1/4 cup grated Parmesan cheese
1 tablespoon chopped fresh or freeze-dried parsley, for garnish

Preheat your oven to 450 degrees F.
Melt butter and olive oil in a skillet over medium high heat.
Cook shrimp until opaque throughout, then remove from heat and hold.
Add garlic and cook until fragrant, stirring constantly, about 1 minute.
Add wine and lemon zest, stir to combine and simmer for 5 minutes. While wine is reducing, cut shrimp in half (bite-size).
Add heavy cream and simmer for ~5 min until thickened to coat a spoon, then turn off heat.
Bake CRUST ONLY for 3 minutes and remove from oven.
Spoon sauce on to crust (~1/4 cup), then use a pastry brush to spread it evenly. Top with 1/2 cups of the pizza cheese and evenly distribute shrimp on top of cheese. Sprinkle the remaining 1/2 cup of cheese on top of pizza, then top with grated parmesan.
Return to oven and bake for 8-10 minutes, or until cheese is melted, bubbly, and light brown in spots. Top with fresh parsley, if desired.
