Pumpkin Soup

1 Hokkaido pumpkin (~1–1.2 kg, no need to peel)
1 onion
3–4 garlic cloves
2 tbsp olive oil
400 ml coconut milk
500–700 ml vegetable or chicken broth
Spices - curry, ginger, chilli, salt and pepper

Preheat oven to 200°C
Prepare pumpkin, cut into chunks (keep skin on)
Place pumpkin, onion (quartered), and whole garlic cloves on a tray, drizzle with olive oil
Roast 30–40 min until soft and slightly browned
Add everything to blender or pot
Add coconut milk and broth, blend until smoot
Heat gently on stove
Add salt, pepper, or spices to taste
