Marry Me Chicken Soup (Tuscan Style)

2 chicken breasts, diced

4 cups of low-sodium chicken broth

1 tablespoon olive oil

1 onion, finely chopped

3 garlic cloves, minced

2 carrots, sliced

2 stalks of celery, diced

1 can (14 oz) diced tomatoes

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

2 cups fresh spinach

1/2 cup heavy cream

Salt and pepper to taste

Fresh parsley for garnish

In a large pot, heat olive oil over medium heat.

Add the chopped onion, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5 minutes.

Stir in the diced chicken and cook until browned, about 5-7 minutes.

Add the diced tomatoes, chicken broth, oregano, basil, and red pepper flakes. Bring everything to a boil.

Reduce the heat and let it simmer for about 15 minutes to allow the flavors to meld.

Stir in the fresh spinach and heavy cream. Cook for another 5 minutes until the spinach is wilted.

Season the soup with salt and pepper to taste.

Serve hot, garnished with fresh parsley.

Notes:

Feel free to add your favorite veggies for extra nutrition. You can use leftover rotisserie chicken for a quicker option.
