High Protein Greek Chicken Taquitos

2 -3 cups of rotiesserie chicken (or 3 boiled chicken breasts) @farmerfocus

4 tortillas @riseandpuff

1/2 cup of cottage cheese @nancysyogurt

1/2 cup feta cheese @athenosfeta

2 tbsp of greek yogurt @wallabyyogurt

1/4 cup of red onions diced

1/2 lemon

Spices: 1 tsp of each: Dill, Salt, pepper, onion powder, garlic powder

Greek Yogurt Tzatziki:

1 cup of greek yogurt

1 cup of shredded cucumbers

1 lemon

3 cloves of garlic (minced)

Spices: 1 tbsp of dill, 1 tsp of salt and pepper

Mix all your chicken ingredients in a bowl and set aside.

Assemble your tortillas with about 1/4 cup of the chicken mixture, roll and spray with avocado oil.

Cook on 400 degrees in air fryer for 9-10 minutes until crispy.

Mix your tzatziki sauce ingredients in a bowl.

Assemble your tacos with desired toppings and dip in greek yogurt tzatziki and enjoy!
