Cheeseburger Quesadillas

150g beef mince (5% fat)
2 tosp tomato ketchup
1 tbsp yellow mustard
2 gherkins, diced
1 medium flour tortilla wrap
30g grated mozzarella
Olive oil spray
Salt and ground black pepper

Start by adding the mince to a large, hot frying pan, along with some salt and pepper, and allow to cook for about 5 minutes, or until well browned.
Once the mince is brown, add the ketchup, mustard and gherkins and fry for another minute.
Grab your tortilla wrap and add half the cheese to one half, followed by your mince mixture and the remaining half of the mozzarella. Fold one half of the tortilla over the other.
Spray the pan you cooked the mince in with some oil spray, then place over a medium heat. Add the quesadilla to the hot pan and fry for a couple of minutes on each side until crispy and golden.
Cut into wedges and serve.
