Baked Chicken Wings

For the Wings:

  • 1.5 lbs (700g) chicken wings (drumettes and flats)

  • 1 tsp baking powder (for crispiness)

  • 1/2 tsp salt

  • 1/2 tsp garlic powder

  • 1/2 tsp smoked paprika

For the Sauce:

  • 3 tbsp honey

  • 3 tbsp sriracha (adjust to your spice preference)

  • 2 tbsp soy sauce

  • Juice of 1 lime (about 2 tbsp)

  • 2 cloves garlic, minced

  • 1 tsp grated ginger

  • 1 tsp sesame oil (optional, for depth of flavor)

For Garnish:

  • Chopped fresh cilantro

  • Toasted sesame seeds

  • Lime wedges

Prepare the Wings:

  • Preheat your oven to 400°F (200°C).

  • Pat the chicken wings dry with paper towels (removing moisture helps them get crispy).

  • Toss the wings in a bowl with baking powder, salt, garlic powder, smoked paprika, and black pepper until evenly coated.

Bake the Wings:

  • Line a baking sheet with parchment paper or foil and place a wire rack on top.

  • Arrange the wings on the rack in a single layer.

  • Bake for 40-45 minutes, flipping halfway through, until golden brown and crispy.

Make the Sauce:

  • In a small saucepan, combine honey, sriracha, soy sauce, lime juice, garlic, ginger, and sesame oil.

  • Simmer over medium heat for 3-5 minutes until the sauce thickens slightly. Remove from heat.

  • Coat the Wings:

  • Once the wings are done, transfer them to a large bowl.

  • Pour the sauce over the wings and toss until evenly coated.

Serve:

  • Arrange the wings on a platter.

  • Sprinkle with chopped cilantro, sesame seeds, and serve with lime wedges for an extra zing.
