For the Wings:
1.5 lbs (700g) chicken wings (drumettes and flats)
1 tsp baking powder (for crispiness)
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp smoked paprika
1/4 tsp black pepper

3 tbsp honey
3 tbsp sriracha (adjust to your spice preference)
2 tbsp soy sauce
Juice of 1 lime (about 2 tbsp)
2 cloves garlic, minced
1 tsp grated ginger
1 tsp sesame oil (optional, for depth of flavor)
For Garnish:
Chopped fresh cilantro
Toasted sesame seeds

Prepare the Wings:
Preheat your oven to 400°F (200°C).
Pat the chicken wings dry with paper towels (removing moisture helps them get crispy).
Toss the wings in a bowl with baking powder, salt, garlic powder, smoked paprika, and black pepper until evenly coated.
Bake the Wings:
Line a baking sheet with parchment paper or foil and place a wire rack on top.
Arrange the wings on the rack in a single layer.
Bake for 40-45 minutes, flipping halfway through, until golden brown and crispy.
Make the Sauce:
In a small saucepan, combine honey, sriracha, soy sauce, lime juice, garlic, ginger, and sesame oil.
Simmer over medium heat for 3-5 minutes until the sauce thickens slightly. Remove from heat.
Coat the Wings:
Once the wings are done, transfer them to a large bowl.
Pour the sauce over the wings and toss until evenly coated.
Serve:
Arrange the wings on a platter.
Sprinkle with chopped cilantro, sesame seeds, and serve with lime wedges for an extra zing.
