Bruschetta con Ricotta Fresca
Makes 1 bruschetta.

Fresh ricotta
1 slice country bread
Unsalted butter, optional
Sea salt and coarsely ground black pepper

If the ricotta is very moist, wrap it in several layers of cheesecloth and let drain for at least 30 minutes in a colander. Lightly toast the bread on both sides. While still warm spread with a little
butter, if desired. Mound the ricotta on the bread and sprinkle with salt and pepper to taste.
Makes 1 bruschetta.
