Pasta Bake

300g pasta
1 onion, finely chopped
1 small carrot, finely diced
2 garlic cloves, minced
1 tin (400g) chopped tomatoes
2 tbsp tomato purée
1/2 tsp smoked paprika
1 tsp dried oregano or mixed Italian herbs
1/2 cup (120ml) full-fat coconut milk OR oat cream*
2 tbsp nutritional yeast (for cheesiness)

1. Cook the pasta:
Boil until al dente (about 1–2 mins less than package recommends).
Drain and toss with a little olive oil to prevent sticking.
2. Make the sauce:
In a pan, heat olive oil. Sauté onion over medium heat for 6–8 mins until soft.
Add garlic, stir for 1 min.
Stir in tomato purée, chopped tomatoes, herbs, paprika, salt, and pepper. Simmer for 10 mins until rich.
Stir in coconut milk/oat cream, nutritional yeast, and balsamic or sugar. Simmer 2 more mins.
Blend with a stick blender for a silky finish (optional, but lovely).
3. Combine:
Mix cooked pasta with the sauce. Stir in any veg or beans now.
4. Assemble the bake:
Pour mixture into a greased baking dish.
Mix topping ingredients and scatter over the top.
5. Bake at 200°C (180°C fan) / 400°F for 15–20 minutes until golden and bubbling.
