One Pot Pasta & Broccoli

New Series✨ BABS WEEKLY ROTATION meals! The meals in this series are so good and hardly take any time to make, you’ll be cooking them every week!

Ingredients: 1 pound penne or pasta of your choice

3 Tbsp Olive Oil

1 ½ Tbsp of fresh minced garlic

8 cups broccoli florets

Juice of 1/2 lemon

1/2 cup Romano cheese or parmesan

Instructions: Boil large pot of water. When water boils add two tablespoons of salt. Add the pasta and the broccoli to the boiling water and cook for 11 minutes or whatever the box of pasta calls for. Before straining the pasta reserve one cup of pasta water. Strain pasta and broccoli. To the empty pot on medium heat put in 2 Tbsp olive oil and add the minced garlic and stir until fragrant. Put pasta and broccoli back in and stir. Add back in rest of olive oil and some of the reserved pasta water. Add 1/2 cup Romano cheese and mix. Top with lemon juice and stir to combine. #weeklyrotation #onepotpasta
