HERO LOAF

  • 3 to 3½/ cups all-purpose flour

  • 1 tablespoon sugar

  • 3 tsp FLEISCHMANN'S Active Dry Yeast

  • 1/4 cup warm water

  • 2 teaspoons SPICE ISLANDS Italian Herb Seasoning

  • 1 teaspoon salt

  • 1 tablespoon olive or vegetable oil

  • 1 1/2 cups warm water (110° to 115°F)

  • 3 ounces thinly sliced cooked ham

  • 3 ounces thinly sliced provolone cheese

  • 3 ounces thinly sliced salami

  • 1 (2-ounce) jar sliced pimientos, well

  • ½ cup pitted ripe olives, drained

  • 1 egg white, lightly beaten

  1. In large bowl, combine 1/4 cup warm water and sugar until dissolved.

  2. Add yeast. Mix with fork to dissolve completely. Let proof 10 minutes.

  3. If yeast has risen, add oil, Italian Seasoning, salt and remaining water.

  4. Add 1½ cups flour. Mix well.

  5. Stir in enough remaining flour to make soft dough. Knead on floured sur- face until smooth and elastic, about 4 to 6 minutes.

  6. Place in greased bowl, turning to grease top.

  7. Cover; Let rise in warm, draft-free place until doubled in size, about 30 to 45 minutes.

  8. Punch dough down. Remove to floured sur- face; divide in half.

  9. Roll to two-14- x 10-inch rectangles.

  10. Layer ham, cheese, and salami lengthwise over center-third of dough; top with pimientos and olives.

  11. With sharp knife, make cuts from filling to dough edges at 1-inch intervals along sides of filling.

  12. Alternating sides, fold strips at an angle across filling.

  13. Place on greased baking sheet; cover. Let rise in warm, draft-free place until doubled in-size, about 30 to 45 minutes.

  14. Brush loaf with egg white; sprinkle with sesame seed.

  15. Bake at 400°F for 25 minutes or until done.

Makes 2 loaves.
