Steak & Potato Hash

2 baking potatoes (unpeeled), cut into 2cm cubes
1 tsp paprika
1 tsp garlic granules
4 tsp olive oil
300g rump steak, cut into 2cm cubes and trimmed of excess fat
2 large eggs
Salt and ground black pepper
Chopped parsley, to serve

Preheat your air fryer to 190°C.
Add the cubed potato, paprika, garlic granules and 2 teaspoons of the olive oil to a bowl, along with a small pinch of salt and a good amount of black pepper, and mix well.
Line your air fryer with baking paper or a silicone liner, then add the potatoes in a single layer. Air-fry for 10 minutes, giving them a shake halfway through.
While the potatoes are cooking, add the steak to the same bowl you used for the potatoes, along with the remaining 2 teaspoons of oil. Mix until coated in the oil and any spices left in the bowl.
Add the steak to the air fryer on top of the potatoes and air-fry for a further 10 minutes.
Make a well in the middle of the steak and potatoes, crack in your eggs and air-fry for a further 3-5 minutes, until the whites are set.
Serve straight away with some chopped parsley sprinkled over the top.

There is something about the combination of steak and eggs that just feels a little bit special, so this steak and potato hash seems like a real treat-yourself breakfast. Easy to make, packed full of flavour and barely any washing up - does it get any better?

NOTES
Keep a close eye on the eggs (check them after 3 minutes) as their cooking time can vary depending on your air fryer.
This is amazing served on its own, but it's also wonderful with some spicy jalapeños or your favourite hot sauce.
