Parmesan Chicken Orzo

2 large boneless, skinless chicken breasts
½ tbsp olive oil, plus spray for cooking the onions
1 tbsp paprika
1 tosp garlic granules
1 large onion, finely diced
4 large garlic cloves, crushed
250g orzo
750ml chicken stock
100ml single cream
40g Parmesan, finely grated
Chopped chives, to serve
Salt and ground black pepper

AIR-FRYER VERSION: Preheat your air fryer to 190°C. Mix the chicken in a bowl with the oil, paprika, garlic granules and lots of salt and pepper, then air-fry for 15-20 minutes, or until fully cooked through.
Meanwhile, spray a large non-stick frying pan with oil spray and add the onion with a pinch of salt. Cook over a medium heat for 6-8 minutes. Add the crushed garlic and cook for 2 more minutes before adding the orzo and stock. Stir well, pop on a lid and simmer for 15 minutes, stirring occasionally so the orzo doesn't stick. (If it gets a little dry before the orzo is tender, add a splash of water.) When the orzo is cooked, stir in the cream and Parmesan. Slice the chicken and serve it on top of the orzo, sprinkled with some chopped chives.
SLOW-COOKER VERSION: Add the chicken, paprika, onion, crushed garlic, 100ml of the stock and lots of salt and pepper to your slow cooker. Mix well, then cook on high for 4 hours or low for 6-8 hours. Half an hour before you want to serve, shred the chicken with 2 forks, then add the orzo and remaining stock. Pop the lid back on and cook until the orzo is tender. Stir in the cream and Parmesan, then serve. (Note that this version uses no oil or garlic granules.)

This creamy chicken dish is my go-to when I need something to warm me up from the inside out. Handily it can be made in either an air fryer or a slow cooker. Best enjoyed under a blanket on the sofa.

I've kept the recipe simple, but feel free to add some veggies like peas, mushrooms or spinach to this.
This will keep for up to 3 days in the fridge; just reheat in the microwave or gently in a pan, with a small splash of water.
