1 CUP FROZEN PEAS AND CARROTS
2 CUPS BABY SPINACH
½ CUP SHREDDED CHEDDAR CHEESE

1. TURN THE INSTANT POT TO SAUTE, ONCE HOT ADD THE BUTTER. ONCE MELTED ADD GARLIC, ONIONS, AND MUSHROOMS, STIRRING TO COAT THEM IN THE BUTTER. SIZZLE FOR 10-15 SECONDS.
2. ADD CHICKEN, RICE, SALT, PEPPER, AND BROTH AND STIR. SCATTER THE PEAS AND CARROTS OVER TOP AND ADD THE SPINACH LEAVES ON TOP, DO NOT STIR.
3. COOK FOR 4 MINUTES ON HIGH PRESSURE
4. ONCE COMPLETE LET PRESSURE RELEASE NATURALLY FOR 10 MINUTES. THEN QUICK RELEASE TO REMOVE LID.
5. STIR IN THE CHEESE AND SERVE.
