a lot of the time, the meals I have for dinner end up looking something like this. sweet potato, aubergine, broccoli + chickpeas, seasoned with thai red curry paste + all roasted in the air fryer. served with a speedy slaw + a quick satay dressing to create a bowl packed with nutrition + flavour. full recipe below 👇🏼

INGREDIENTS (serves 2-3)
1 sweet potato
1 aubergine
100g tenderstem broccoli
570g jar chickpeas, drained
1-2 tbsp thai red curry paste
4 tbsp olive oil
¼ red cabbage
1 red onion
1 large carrot, grated
3-4 tbsp mayo
1 tsp chilli crisp
1 lime, juiced
1 tbsp toasted sesame seeds
2 tbsp crunchy peanut butter
1 tsp miso paste
1 tbsp soy sauce
1 tbsp sesame oil
1 tsp rice vinegar
1 garlic clove, minced
1 tsp fresh ginger, minced
1 lime, juiced
100ml coconut milk
Splash of water, to loosen
